Friday's Fun with Food:Family Pizza Night

      I haven't always allowed my kiddos to help me cook.  It use to be a chore for me to have them in the kitchen,  As I grew as a mom, I realized how important it was for me to have my children next to me when I was cooking or cleaning.  They needed to learn these valuable skills so they would be good wives and husbands one day.

       Today I want to share some family recipes and ways the kiddos can help you in the kitchen.



     Here we are having pizza night.  Each of us get to roll out
our individual pizzas, and add whatever toppings we want.  It
is a hit with the little kiddos.  They feel so grown up when they can cook all by themselves.


     Our pizza dough and sauce are made by hand.
 Our favorite recipes are easy, but so yummy!

Pizza Dough Ingredients:

3 cups of all purpose flour

1 tbsp of sugar

1 tsp of salt

2 1/4 tsp of regular or active dry yeast

3 tbsp of olive oil

1 cup of warm water

Directions:

Mix 1 cup of the flour, the sugar, salt and yeast in a glass bowl. Add 3 tablespoons oil and the warm water. Beat with electric mixer on medium speed 3 minutes, scraping bowl frequently. Stir in enough remaining flour until dough is soft and leaves sides of bowl. Place dough on lightly floured surface. Knead 5 to 8 minutes or until dough is smooth and springy. Cover loosely with plastic wrap and let rest 30 minutes. 

This recipe makes about 2 thin medium pizzas.
We triple this recipe so each of us can make our own mini pizzas.


Our pizza sauce is very simple:

1 large can of organic tomato sauce

1 can of organic diced tomatoes

1 medium onion

2 cloves of garlic or 1 tbsp of garlic powder

1 tbsp of olive oil

1 to 2 tsp of Italian seasoning

1 tsp of sugar

Directions:

Place your olive oil in a skillet and let it warm on the stove as
 you dice your onions and garlic.
Saute your onions and garlic until they are soft.
Add the remaining ingredients to your skillet and allow them to
simmer on low for about an hour.

Simple but amazing :)

After our dough and sauce are ready we get
out the toppings to our pizza and the fun begins.
You can use anything your family enjoys from pepperoni to anchovies.


     Now what is a good pizza without a yummy dessert.....
 Here is Hope making us strawberry cupcakes.  

These are fun and delicious.

Just take a regular white cake mix and prepare with directions on the box. 
Add some great fresh fruit when you are finished mixing. 
You can choose your fruit,  We like strawberries and blueberries best. 
Bake the cupcakes as directed on box. Cool, frost and serve!

 

For fun and cuteness, we add a small sliver of fruit to the top of the cupcakes.
